Carnival Cruise with extended family?

I've been on two cruises - Celebrity on a honeymoon and a recent Disney Cruise with his wife and daughter. My parents (grandparents) want to take the family (couple with two children - 4, 7 and 9 + My sister 40 years) during a cruise. This is because the major space agencies ships a year or more in advance at rates lower than the current offer.
